Data obtained from scanning electron microscopy (SEM), Fourier transform infrared spectroscopy (FTIR), and X-ray diffraction (XRD) confirmed the preparation of chitosan nanoparticles (CMNPs) and their subsequent modification with papain using either glutaraldehyde (CMNP-Glu-Papain) or genipin (CMNP-Gen-Papain). Results from enzyme activity assays showed that immobilization using glutaraldehyde and genipin respectively elevated the optimal pH of papain from 7 to 75 and 9.
